The Big Book of Tasting

“Better knowledge for better appreciation” is the keystone of Taste of Wine.
This book has been written with all those interested in quality wine in mind and who wonder about the mysteries of its taste and the meaning of the act of drinking. It benefits from the full weight of oenological knowledge but also from the contribution of the experience of wine people.
The first edition, in 1980, was an event. Forty years later, this new presentation, in keeping with the original spirit of the book, takes into account what we know today about the mechanisms of taste and smell perception, encompassing current types of consumption and the types of wine available, in France and throughout the world.
Continuing a collaboration with Émile Peynaud that began in 1960 and has been deepened through numerous publications, Jacques Blouin brings his practical experience of oenology, tasting, and the organisation of international competitions acquired in all the vineyards of Bordeaux and the whole world.
A true reference, this book helps everyone to better understand today’s wines, to better understand them in order to better savour them, for their own pleasure.

Émile Peynaud

A world-renowned oenologist and renowned taster, he is considered, along with Jean Ribéreau-Gayon, to be one of the fathers of modern oenology. A brilliant scientist, an outstanding educator and populariser, he was the advisor to many great Bordeaux wines and wine estates throughout the world.

Jacques Blouin

Grandson and son of winegrowers, former student of Jean Ribéreau-Gayon and Émile Peynaud, he directed the Wine Department of the Gironde Chamber of Agriculture for over thirty years. He has continued his auditing and conference activities in ten countries and for ten years he ran two international wine competitions.
