What to eat in case of intolerance and allergy

Allergies and intolerances have been steadily increasing in recent decades, and an increasingly prominent place is occupied by an adverse reaction to nickel. Unfortunately this metal is everywhere, in the soil as well as in 1 and 2 euro coins, in food containers as well as in many foods, especially of plant origin. What can be done, then? First, it is important to harmonize the three pillars of health: mind, body and nutrition.

The author suffers from celiac disease and, for some periods, was intolerant to nickel. She therefore starts from her own personal and professional experience to suggest a path to complete healing.

The book outlines the foods to avoid (hydrogenated fats and industrial products first and foremost) and those that can be reintroduced after an initial period of detox. At the heart of the method described by Alessandra Cremonini is a rotation diet, namely the cautious reintroduction, after a period of detoxification, of certain plant foods containing nickel.

The more than 90 recipes combine, in a perfect balance, health and flavour, because that an allergy to nickel does not necessarily mean that you have to give up certain ingredients.

Alessandra Cremonini works as a nutritionist in the province of Bologna and Modena. After graduating in Biological Sciences, she attended courses and masters in vegetarian and vegan nutrition and dietetics. She specializes in pediatric naturopathy and is also a practitioner of the Kousmine method. She teaches and conducts courses and evening sessions to promote health and prevention through nutrition and natural therapies.
