Fabulous Fermentations

Microbes are our allies: they are good for us!

Let’s (re)discover universal ways of transforming and preserving our foods, some of them several millennia old, yet more relevant than ever given their nutritional benefits.

Until now, the “health claims” of fermented foods lacked scientific confirmation. With this book, Claude Aubert seeks to fill that gap by drawing on the most recent scientific studies to present all the benefits of fermentation for health and by widening knowledge to families of fermented foods that have been little explored, such as those of cereals and legumes.

After this initial scientific overview, Claude Aubert presents 30 foods to ferment at home, accompanied by tasty recipes to easily incorporate them into everyday life (waffles made with fermented oat flakes, sauerkraut with apples, dosas with fenugreek, tempeh with coconut milk…).

He also shows how fermentation can be a valuable aid for those who want to make their diet more plant-based.

The result: better health without giving up deliciousness!
