Dafne Chanaz

Dafne Chanaz is a researcher and disseminator of Italian rural traditions. A university lecturer, cook and journalist, she has authored many articles and four books, as well as edited several TV documentaries on Mediterranean cuisine, ecology and natural health care. She has taught more than 600 families to bake at home by founding the Confraternity of Mother Dough and has focused her attention on the gastronomic and medicinal qualities of wild edible plants.
