In 2008 the first edition of this book dedicated to sourdough bread came out, followed by no less than eleven reprints. Today sourdough has become the undisputed protagonist of countless blogs, websites, Facebook groups, tutorials and courses. So why engage in the difficult task of updating this book? Because there are still so many secrets the author wants to share with her devoted readers.

In the book, in addition to more traditional Italian recipes, there are recipes with organic ancient grain flours, with a reduced amount of sourdough to compensate when the metabolism slows down, with flours from specific mills, and so on. A book written both for those approaching home baking for the first time and for those who are long experienced.
