Organic cultivation of forgotten vegetables
This handbook explains how to cultivate with the principals of organic agriculture a series of plants that have a very high nutritional value and great culinary interest, but strangely are not found often enough in European vegetable gardens. For example, it teaches how to grow ginger, goji berries and stevia, which have become very popular in recent years. But the book also includes the lesser-known chickweed, lampascione and purslane, which have always been grown and consumed only in a few very restricted areas.
In the long list of “unusual vegetables” we also find plants of Asian, African or South American origin, but which are well adapted to our climate, such as pak choi, okra, minzuna, kiwano or chayote. But obviously such a book could not help including European vegetables such as parsnips, black peel, Jerusalem artichoke, St. Peter’s wort, and farinaccio, which for centuries have been a valuable source of nourishment.
We get therefore to a total of thirty-six vegetables, small fruits and tubers, each accompanied by an in-depth fact sheet with all the information needed for cultivation. A simple and practical way to make our gardens more varied and counteract the process of impoverishing biodiversity… and our own diet.
