Martine Agrech
Martine Agrech was born in 1953 into a family of cereal farmers in the south west of France, and lives today in the family mill. Her research, her own bread-making practice and her meetings with millers, bakers and nutritionists have led to several culinary books. She wrote Faire son pain, spécial machine à pain (Larousse, 2007) and, for Éditions Le Sureau, a Petit traité de la farine complète (2008) and a Petit traité de l’huile d’olive (2011). For her, bread deserves particular attention in the way we eat.
