Marco Fortunato

Marco Fortunato is the founder of the I’m in fermentation project, which was launched in 2015 following a radical change in his life. He has been involved in cooking since 2000 and has worked as a chef in several vegan restaurants. Since 2015, he has been working full-time in fermentation, holding courses throughout Italy.
